Arugula Beet Salad

 

This refreshing side dish recipe was created with Fit Couple Cooks. Try it with Lean Cuisine Marketplace Cheese Tortellini in Roasted Red Pepper Sauce!

Ingredients:

Salad:

  • 1 cup packed arugula
  • 4 beets, roasted and peeled (about 8 oz)
  • 3/4 cup walnuts
  • ¼ teaspoon sea salt
  • ¼ teaspoon pepper
  • 3/4 lb feta cheese

Dressing:

  • 1 teaspoon Dijon mustard
  • 2 teaspoon balsamic vinegar
  • 2 tablespoons olive oil

Directions:

  1. In a large bowl, whisk together the mustard, vinegar and olive oil.
  2. Add arugula and toss to coat. Quarter the beets and place in the bowl.
  3. Add the walnuts, sprinkle with salt and pepper and mix together.
  4. Top with the feta cheese.
