Avocado Lentil Salad

Make this salad in the time it takes to heat up your Lean Cuisine Marketplace Tortellini in Roasted Red Pepper Sauce.

Ingredients (4 Servings):

Salad:

  • 1 small red onion
  • 1 ripe avocado
  • 2 large tomatoes
  • 2 tablespoons cilantro
  • 1 can (15 oz) lentils, drained

Dressing:

  • 1 lemon
  • 1 tablespoon olive oil
  • ¼ teaspoon sea salt
  • ¼ teaspoon pepper

Directions:

  1. Dice avocado, tomato and onion and place in a bowl. Add the lentils and mix together gently. Drizzle with lemon juice and olive oil. Season with cilantro, salt and pepper.
