Roasted Cauliflower with Tomato Greek Yogurt Tahini Sauce (4 Servings)

Ingredients:

  • 2 Cups cauliflower florets
  • 2 Tablespoons olive oil
  • Salt and pepper to taste
  • Tomato Greek Yogurt Tahini Sauce:

  • 1 Clove garlic, peeled
  • 5 Tablespoons sesame paste
  • 1/4 Cup water
  • 1/4 Cup Greek yogurt (I used 2% fat)
  • 1 1/2 Tablespoon lemon juice
  • 1 Tomato, seeded
  • Salt and pepper to taste

Directions:

  1. Pre-heat the oven to 375 degrees.
  2. Toss the cauliflower florets with the olive oil and spread out on a baking sheet lined with parchment paper. Season with salt and pepper.
  3. Bake for 15 minutes and then place the pizza next to it, directly on the oven rack (according to package directions) and continue baking for an additional 18 - 20 minutes.
  4. Make the sauce by combining the garlic, sesame paste, water, Greek yogurt, lemon juice and tomato in a blender or small food processor and puree until smooth. Season with salt and pepper to taste.
  5. When the pizza and cauliflower are done, spread an equal amount of the sauce on 4 plates and top with the cauliflower and a quarter of the pizza.
