Tortellini Power Bowls

 

These recipes were created in partnership with Liz Weiss, MS, RD of Liz’s Healthy Table.Try them all with BUITONI® Spinach Cheese Tortellini to bring balance to pasta night, each with a different spin for fun and variety.

 

 

Spinach Cheese Tortellini Power Bowl with Cherry Tomatoes, Corn, Beans, and Basil

Ingredients:

  • 1 cup Buitoni Spinach Cheese Tortellini, cooked according to package directions
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup cherry tomatoes, halved
  • 1/2 corn cob, cooked
  • 1/3 cup canned cannellini beans
  • Handful basil, fresh, chopped
  • Grated Parmesan cheese, toasted walnuts to taste

Directions:

  1. Heat extra virgin olive oil in a nonstick skillet over medium heat.
  2. Remove corn kernels from cob.
  3. Add cherry tomatoes, corn kernels, cannellini beans and basil.
  4. Sauté for 2 minutes until warmed through.
  5. Toss with 1 cup of Buitoni Spinach Cheese Tortellini, cooked per package directions, and top with grated Parmesan cheese, toasted walnuts and more basil.

Spinach Cheese Tortellini Power Bowl with Roasted Asparagus and Shrimp

Ingredients:

  • 1 cup Buitoni Spinach Cheese Tortellini, cooked according to package directions
  • ¼ pound shrimp, cooked
  • Asparagus, grilled or steamed
  • Creamy Caesar dressing
  • Garnish dill, fresh

Directions:

  1. Arrange Buitoni pasta, shrimp and asparagus in a bowl.
  2. Drizzle with dressing and garnish with fresh dill, if desired.
  3. Serve hot, warm or cold.

Spinach Cheese Tortellini Power Bowl with Roasted Chicken, Cucumber, Carrots, Avocado and Basil

Ingredients:

  • 1 cup Buitoni Spinach Cheese Tortellini, cooked according to package directions, chilled
  • Carrots, shredded
  • English cucumbers, sliced
  • Avocado, sliced
  • Roasted chicken, such as rotisserie, diced
  • Green onion, chopped
  • Basil, ribboned
  • Vinaigrette

Directions:

  1. Fill bowl with all ingredients.
  2. Drizzle with vinaigrette dressing.
